Cheese carriers in traditional white outfits and colored hats — each color representing a different guild — carry rounds of cheese on wooden sledges, weigh them at the historic Waaggebouw (weigh house), and complete the trade through a ceremonial hand-clapping negotiation. It's genuinely performative rather than a working commercial market at this point, but performed with real craft and history behind it rather than as a hollow tourist show.
Arrive by 9:30am to get a good position — the market runs on a fixed schedule starting at 10am and the main square fills in quickly once it begins.
Beyond the cheese market
Alkmaar's historic center is genuinely worth exploring beyond market hours — canals, a Gothic town hall, and the Grote Kerk, where the composer and organist tradition runs deep. Alkmaar vs. Edam's market
